Preparation of baking soda: Baking soda is produced by Solvay ammonia process which uses salt as one of the raw materials.

Properties of baking soda: When sodium hydrogencarbonate is heated it decomposes to form sodium carbonate with the production of carbon dioxide gas. Carbon dioxide produced during the reaction causes bread or cakes to rise, making them soft and spongy.

Uses of baking soda:

In making baking powder – Baking powder is a mixture of baking soda and tartaric acid. When baking powder is heated or mixed with water, the following reaction takes place–

${NaHCO}_{3} + H^{+} \to {CO}_{2} ↑ + H_{2} O + Sodium salt of acid (from acid)$

Carbon dioxide produced during the reaction causes bread or cakes to rise, making them soft and spongy.

Sodium hydrogencarbonate is used as an antacid to reduce the acidity of the stomach. Being alkaline, it neutralizes excess acid in the stomach.

Baking soda is also used in soda-acid fire extinguishers.
